Southwest Chicken Recipe

Brent came home the other day with an idea for dinner. Normally you can’t and won’t find him in the kitchen cooking anything but his infamous breakfast scramble. But this time he had an idea and wanted my help in implementing dinner. So here is our Southwest Chicken Recipe along with what we think would go great with it.

Ingredients
  • 1 Jar any type of Salsa you like
  • 1 + lb of Chicken Breast
  • Shredded Pepper Jack Cheese
Instructions
  1. I decided to throw the chicken and salsa into the crockpot for about half the day to let the salsa soak into the chicken. After the chicken was fully cooked I took about 1 -2 cups of the salsa from the crockpot put it into a baking pan, added the chicken, covered with the pepper jack cheese and put it on bake for about 30 -45 mins.

 

We served this with Spanish Rice, but we thought beans, tortillas and chips could also go with it along with a nice light salad.

5 cloves garlic
lemon juice
salt/pepper
1 tsp worcestershire sauce
½ cup parmesan
1 ex large egg
Extra Virgin Olive Oil

Mince garlic in blender. Mix lemon juice, salt, pepper, worcestershire sauce, cheese, egg in blender. Add evoo.
